Just one thing today

If I was to do just one creative thing today, what would it be?

Today it was making these delightful sweet bites !  I adapted a recipe*, and tried out different ingredients from the cupboard: nuts/seeds + dried fruit + sticky stuff + coating = yummy 🙂

Almond sultana choc balls: 125g flaked almonds and chia seeds + 250g sultanas + 1 tsp cocoa powder + 1 tablesppon peanut butter + 1 tsp coconut oil.  Put in a food processor and combine.  Roll into small balls and roll in a coating of cocoa powder.  Refrigerate.

Cranberry cashew snowballs: 125g cashew nuts and sunflower seeds + 250g dried dates and dried cranberries + 1 tsp cinnamon + 1 tablespoon honey + 1 tsp coconut oil.  Put in a food processor and combine.  Roll into small balls and roll in a coating of desiccated coconut.  Refrigerate.

They don’t last long!  Yummy 🙂
